I have been obsessed with my Instant pot and trying out new recipes every week. Shams and I have been trying to go meat-free for a while now. For us comfort food is a basic lentil curry and some rice. Here’s a perfectly good Instant pot Daal recipe that you can make in under 25 minutes.
¾ cup mixed lentils (I usually mix brown, green and yellow split lentils)
1 small onion chopped
½ tsp ginger garlic paste
Salt to taste
1.5-2 cups of water
¼ tsp turmeric powder
½ tsp ground cumin
½ tsp garam masala
½ tsp red chilli powder (adjust as per your taste)
¼ tsp mustard seeds
1 tsp ground coriander powder
Cilantro for garnish
1.5 tablespoon oil
Press the saute button on your Instant pot. Add the oil, Once hot add the mustard seeds and let it crackle. Add in Ginger Garlic paste and chopped onions. Fry until translucent.
Add chopped tomatoes and all spices and cook for a minute or two until fragrant.
Press the cancel button followed by Pressure cook button for 10 minutes. Add in the lentils and water. Cover the Instant pot and let it cook. Once 10 minutes are over let it NPR before opening the pot.
Garnish with Cilantro and some lemon juice(optional) and enjoy hot with Basmati rice.
